 Ingredients:

- 4 medium-sized potatoes (Yukon Gold or Russet are good choices)

- Vegetable oil (for frying)

- Salt (to taste)

- Optional seasonings (paprika, black pepper, garlic powder, etc.)


Instructions:


1. Prepare the Potatoes:

   - Wash the potatoes thoroughly to remove any dirt.

   - Use a vegetable peeler to peel the potatoes if desired (leaving the skin on can add extra crispiness).

   - Slice the potatoes very thin (about 1/16 inch or thinner). A mandoline slicer works best for uniform thickness, but you can use a sharp knife if needed.


2. Soak the Slices:

   - Place the potato slices in a large bowl of cold water.

   - Let them soak for at least 30 minutes. This helps to remove excess starch, which leads to crispier chips.

   - After soaking, drain the slices and pat them dry with paper towels or a clean kitchen towel.


3. Heat the Oil:

   - In a deep, heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C). You’ll need enough oil to submerge the potato slices fully.


4. Fry the Chips:

   - Fry the potato slices in small batches to avoid overcrowding, which can lower the oil temperature.

   - Fry each batch for about 3–5 minutes, or until the chips are golden brown and crispy.

   - Use a slotted spoon to remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil.


5. Season the Chips:

   - While the chips are still warm, sprinkle them with salt or your preferred seasonings (like paprika, garlic powder, or pepper).


6. Cool and Serve:

   - Let the chips cool slightly before serving to allow them to crisp up fully.
