 Here's a simple and delicious method to cook Kadai Paneer, a popular Indian dish made with paneer, bell peppers, and a spicy, tangy tomato-based gravy.

Paneer recipe in a kadai


  Ingredients:

Paneer: 250g (cubed)

Onion: 1 large (sliced)

Tomatoes: 2 large (pureed)

Green Bell Peppers (Capsicum): 1 medium (cut into cubes)

Ginger-garlic paste: 1 tablespoon

Green chillies: 2 (slit)

Kashmiri red chili powder: 1 teaspoon (for color)

Turmeric powder: ½ teaspoon

Coriander powder: 1 tablespoon

Garam masala: 1 teaspoon

Kasuri methi (dried fenugreek leaves): 1 teaspoon (optional)

Cumin seeds: 1 teaspoon

Oil or ghee: 3 tablespoons

Fresh coriander leaves: for garnish

Salt: to taste

Kadai Masala (freshly ground spice mix):

Coriander seeds: 1 tablespoon

Cumin seeds: 1 teaspoon

Dried red chillies: 2-3

Method:

 Step 1: Prepare the Masala

1. Dry roast the coriander seeds, cumin seeds, and dried red chilies in a pan until they become fragrant. This should take 2-3 minutes.

2. Cool them down and coarsely grind them using a mortar and pestle or a grinder. Keep aside.

Step 2: Prepare the Gravy

1. Heat 2 tablespoons of oil or ghee in a kadai (wok) on medium heat. Add cumin seeds and let them crackle.

2. Add the sliced ​​onions and sauté them until they turn golden brown.

3. Add ginger-garlic paste and green chilies. Cook for 1-2 minutes until the raw aroma goes away.

4. Add the tomato puree and cook until the oil starts to separate from the gravy (about 5-7 minutes).

5. Add the prepared kadai masala, turmeric powder, coriander powder, and Kashmiri red chili powder. Sauté for a minute.

  Step 3: 

1. Add the cubed green bell peppers and sauté them for 2-3 minutes until they slightly soften but retain their crunch.

2. Add the paneer cubes and mix gently to coat them with the masala.

3. Add salt to taste and a little water (about ¼ cup) if the gravy is too thick. Let it simmer for 2-3 minutes.

Step 4: Finishing Touch

1. Add garam masala and kasuri methi (optional) and mix well.

2. Garnish with freshly chopped coriander leaves.

Serve:

Serve hot with naan, roti, or steamed rice!
