Method for making green Sauce (chutney)

 Here's a simple and delicious recipe for making Green Sauce (Chutney) , which is commonly used in Indian cuisine. This chutney is versatile and can be paired with snacks like samosas, pakoras, sandwiches, and more.



Ingredients:

  • 1 cup fresh cilantro (coriander leaves)
  • ½ cup fresh mint leaves
  • 1-2 green chilies (adjust based on your spice preference)
  • 1 small garlic clove
  • 1-inch piece of ginger
  • 1 tablespoon lemon juice (or ½ teaspoon tamarind pulp)
  • ½ teaspoon roasted cumin powder
  • Salt to taste
  • 1-2 tablespoons water (adjust for consistency)

Optional:

  • 1 tablespoon plain yogurt (for a creamier texture)
  • 1 teaspoon sugar (to balance the spice)

Instructions:

  1. Prepare the ingredients : Rinse the cilantro and mint leaves thoroughly to remove any dirt. Peel the garlic and ginger.

  2. Blend : In a blender or food processor, add cilantro, mint, green chilies, garlic, ginger, cumin powder, and lemon juice.

  3. Add water : Add a small amount of water (start with 1 tablespoon) to help blend the chutney into a smooth paste.

  4. Season : Add salt to taste. If you prefer a little sweetness, you can also add sugar at this stage.

  5. Optional : For a creamier consistency, you can add yogurt and blend again.

  6. Adjust consistency : If the chutney is too thick, add a little more water and blend until you reach the desired consistency.

  7. Taste and adjust : Check for seasoning. Add more salt, lemon juice, or chili as per your taste preference.

  8. Serve : Transfer the chutney to a bowl and serve fresh.

Storage:

  • You can store the chutney in an airtight container in the refrigerator for up to 3-4 days.
  • It can also be frozen in small portions (like ice cube trays) for later use.
