Chilli Potato Recipe
Ingredients:
4 medium-sized potatoes (cut into wedges or fingers)
2 tbsp cornflour
1 tbsp all-purpose flour (maida)
1 tsp red chilli powder
Salt to taste
frying oil
For Sauce:
1 tbsp oil
1 tbsp garlic, finely chopped
1 tbsp ginger, finely chopped
1 onion, chopped into chunks
1 bell pepper, chopped into chunks
2-3 green chillies, slit
2 tbsp soy sauce
1 tbsp red chilli sauce
1 tbsp tomato ketchup
1 tsp vinegar
1 tsp sugar (optional)
1 tbsp cornflour mixed with 3 tbsp water (for thickening)
Spring onions, chopped (for garnish)
Method:
1.Prepare Potatoes:
Peel and cut the potatoes into wedges or fries.
Boil them in salted water for 5-7 minutes or until slightly tender. Drain and let them cool.
In a bowl, mix cornflour, all-purpose flour, red chili powder, and a pinch of salt.
Toss the boiled potatoes in this dry mixture, ensuring they are well-coated.
Heat oil in a deep pan and fry the coated potatoes until golden and crispy. Drain on paper towels.
2.Prepare the sauce:
Heat 1 tbsp oil in a wok or a pan over medium heat.
Add chopped garlic, ginger, and green chillies. Stir-fry until fragrant.
Add onions and bell peppers, stir-frying for 2-3 minutes until they are slightly tender but still crunchy.
Add soy sauce, chili sauce, tomato ketchup, vinegar, and sugar. Stir well.
Pour in the cornflour slurry to thicken the sauce. Stir continuously until the sauce thickens to the desired consistency.
Adjust seasoning with salt, if needed.
3.Combine:
Add the fried potatoes into the sauce and toss gently to coat them well.
Garnish with chopped spring onions.
4.Serve:
Serve hot as a snack or side dish with extra spring onions on top!
