 Lady Finger Recipe (Bengali)



Ingredients:

  • 250g ladyfinger (bhindi), washed and chopped
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 onion, thinly sliced
  • 2 green chilies, slit (optional)
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Method:

  1. Prepare the Bhindi:

    • Wash the ladyfingers thoroughly and pat them dry using a kitchen towel. Ensure they are completely dry to avoid sliminess while cooking.
    • Chop off both ends and slice them into 1-2 inch pieces.
  2. Sautéing the Bhindi:

    • Heat 1 tablespoon of oil in a pan on medium heat.
    • Add the chopped bhindi to the pan and sauté them for 7-8 minutes until they become soft and slightly crispy. Stir occasionally to prevent sticking.
    • Remove the bhindi from the pan and set aside.
  3. Cooking the Masala:

    • In the same pan, heat the remaining 1 tablespoon of oil.
    • Add cumin seeds and let them splutter.
    • Add sliced onions and green chilies (if using), and sauté until the onions turn golden brown.
    • Stir in the ginger-garlic paste and cook for another 1-2 minutes until the raw smell disappears.
  4. Spicing it Up:

    • Add turmeric, red chili powder, coriander powder, and salt. Mix well and cook the spices for 1-2 minutes, ensuring they don't burn.
  5. Mix Bhindi with Masala:

    • Add the sautéed bhindi back into the pan.
    • Stir well so that the masala coats the bhindi evenly.
    • Cook for another 5-6 minutes, stirring occasionally, until the bhindi is fully cooked and the spices are well absorbed.
  6. Finish and Serve:

    • Sprinkle garam masala and stir it in during the last minute of cooking.
    • Garnish with freshly chopped coriander leaves.
    • Serve hot with roti, paratha, or as a side dish with rice.
