Lady Finger Recipe (Bengali)
Ingredients:
- 250g ladyfinger (bhindi), washed and chopped
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 onion, thinly sliced
- 2 green chilies, slit (optional)
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Method:
Prepare the Bhindi:
- Wash the ladyfingers thoroughly and pat them dry using a kitchen towel. Ensure they are completely dry to avoid sliminess while cooking.
- Chop off both ends and slice them into 1-2 inch pieces.
Sautéing the Bhindi:
- Heat 1 tablespoon of oil in a pan on medium heat.
- Add the chopped bhindi to the pan and sauté them for 7-8 minutes until they become soft and slightly crispy. Stir occasionally to prevent sticking.
- Remove the bhindi from the pan and set aside.
Cooking the Masala:
- In the same pan, heat the remaining 1 tablespoon of oil.
- Add cumin seeds and let them splutter.
- Add sliced onions and green chilies (if using), and sauté until the onions turn golden brown.
- Stir in the ginger-garlic paste and cook for another 1-2 minutes until the raw smell disappears.
Spicing it Up:
- Add turmeric, red chili powder, coriander powder, and salt. Mix well and cook the spices for 1-2 minutes, ensuring they don't burn.
Mix Bhindi with Masala:
- Add the sautéed bhindi back into the pan.
- Stir well so that the masala coats the bhindi evenly.
- Cook for another 5-6 minutes, stirring occasionally, until the bhindi is fully cooked and the spices are well absorbed.
Finish and Serve:
- Sprinkle garam masala and stir it in during the last minute of cooking.
- Garnish with freshly chopped coriander leaves.
- Serve hot with roti, paratha, or as a side dish with rice.
