Method for making gujiya
Here's a method for making Gujiya, a delicious Indian sweet often enjoyed during festivals like Holi:
Ingredients
For the dough:
2 cups all-purpose flour (maida) 2tablespoons ghee or unsalted butter
a pinch of salt
Water (as needed)
For the filling:
- 1 cup grated fresh coconut (or khoya)
- 1 cup powdered sugar (adjust to taste)
- 1/2 cup chopped nuts (cashews, almonds, pistachios)
- 1/4 teaspoon cardamom powder
- 1/4 cup raisins (optional)
For frying:
- Oil or ghee (for deep frying)
Method
1. Prepare the dough:
1. In a large mixing bowl, combine the all-purpose flour, ghee, and salt.
2. Mix well until the mixture resembles breadcrumbs.
3. Gradually add water and knead into a smooth, firm dough. Cover with a damp cloth and let it rest for about 30 minutes.
2. Make the filling:
1. In a pan, dry roast the grated coconut on low heat until it turns slightly golden (if using fresh coconut).
2. Remove from heat and let it cool.
3. Mix the roasted coconut with powdered sugar, cardamom powder, chopped nuts, and raisins until well combined.
3. Assemble the Gujiya:
1. Divide the dough into small balls (about the size of a golf ball).
2. Roll each ball into a thin circle (about 4-5 inches in diameter).
3. Place a tablespoon of filling in the center of each circle.
4. Fold the circle in half to create a semi-circle and press the edges to seal. You can use a fork to crimp the edges for a decorative look.
4. Fry the Gujiya:
1. Heat oil or ghee in a deep frying pan over medium heat.
2. Once hot, gently slide in the gujiyas (in batches) and fry until golden brown on both sides.
3. Remove and drain on paper towels to remove excess oil.
5.Serve:
- Allow the gujiyas to cool before serving. They can be enjoyed warm or at room temperature. Store any leftovers in an airtight container.
